Has anyone ever researched a horse betting system?

No

But I had a dear aunt, who loved the ponies. She would go to the track regularly, check its condition, tour the paddocks, talk with trainers, review the odds, etc etc etc. She made money from her game, but no, she would never share her bets or "system".

I have not built one but there are plenty of great papers in the area. William Ziemba also know as "Dr Z" is someone to look up in terms of papers published. Very well known and respected professor in finance and operations theory who also does quant investing and gambling.

The book you want to find and read is the Efficiency of Racetrack Betting Markets by Hausch, Lo, & Ziemba. It is a collection of articles and journal papers that form the right foundation to any venture in this area.
